Eggplant Baked in Armenian.

Eggplant Baked in Armenian.
Medium eggplants 3 pcs.
Onion 2 pcs.
Sweet peppers (red or yellow) 2 pcs.
Tomatoes 3 pcs.
Sunflower oil 2 tbsp. tablespoons
Garlic (teeth) 4 pcs.
Apples 2 pcs.
Spicy tomato paste 2 tbsp. tablespoons

1 bunch salt ground pepper Ingredients to eggplant dishes I want to offer a recipe of Armenian cuisine. Frankly I do not know how authentic it is, because not yet had occasion to be in Armenia. And this wonderful recipe shared with me the familiar Armenian. Eggplant obtained aromatic, with a rich taste. Try it! Preparation:

Turning the oven to heat up to 200 degrees.
Eggplants and tomatoes cut into slices, onion and paprika - semicircles.
Speaking of eggplant. I used to also sprinkle them with salt, but now chefs are not advised to do so, along with the salt washed half of useful elements that contain eggplant. So I did them without first doing, washed, cut and everything. No bitterness is not felt. But I will not impose my opinion, leave it to your discretion, do as you wish fit.

Harbored paper and spread layers vegetables: eggplant, onions, peppers and tomatoes.
Sprinkle with a little water and pour oil.
Put the vegetables in the preheated oven for 30 minutes.
After 30 minutes, take out, season with salt, pepper, garlic and squeezed chopped cilantro. Add spicy tomato paste (if you want to make the dish a milder, put not spicy tomato paste or ketchup). Mix gently.
Apples cut into slices and arrange on top of vegetables. They are added for flavor, so the peel and the seeds can be left.
Cover with foil and put in the oven for another 30 minutes.
We get eggplant, apples are set aside and stir again.

In the hot is a great side dish to meat, and cold - delicious vegetable salad.
